Green Tea Mochi Ice Cream

Experience mochi like never before with Chef John's tantalizing green tea mochi ice cream recipe.
Ingredients:
  • 10 small scoops vanilla ice cream
  • 0.5 cup sweet rice flour
  • 0.5 cup cold water
  • 1 pinch salt
  • 2 tablespoons white sugar
  • 1 teaspoon green tea powder (matcha)
  • 1 tablespoon cornstarch, or as needed
Instructions:
  • Discard the top half of the cardboard egg carton, then line 10 cups in the bottom half with plastic wrap.
  • Fill 10 egg carton cups with scoops of ice cream. Cover with plastic wrap and freeze until very firm, for at least 2 hours.
  • Combine rice flour, water, and salt in a microwave-safe bowl, stirring until smooth. Mix in sugar until fully incorporated, then whisk in green tea powder.
  • Cover the bowl of rice flour mixture with plastic wrap, then microwave for 2 minutes. Stir the mixture, cover it again with the plastic wrap, and microwave for an additional 1 1/2 minutes until the mochi dough is thick and sticky.
  • Sprinkle cornstarch on a clean surface. Place mochi dough on the surface. Roll it out into a 1/8-inch thick rectangle and cut into 10 equal squares.
  • Unwrap the ice cream balls and place one in the center of each mochi dough square. Enclose the ice cream completely with the mochi, pinching the edges together at the base and trimming off any extra dough. Repeat for the rest of the ice cream and dough squares.
  • Wrap each mochi ball snugly in plastic wrap and nestle them seam-side down in an egg carton. Freeze until solid, approximately 2 hours.
