Chef John's grilled garlic and herb shrimp: Fresh herbs, crushed garlic in marinade and serving sauce. Summer classic!
Ingredients:
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon lemon zest
  • 3 cloves garlic, thinly sliced
  • 3 tablespoons chopped fresh basil leaves
  • 3 tablespoons chopped fresh flat-leaf parsley
  • 1 tablespoon chopped fresh oregano leaves
  • 1 tablespoon chopped fresh lemon thyme leaves
  • 4 tablespoons olive oil, divided, or as needed
  • 2 pounds extra large shrimp (16-20), peeled and deveined, tail left on
  • skewers
  • 0.5 lemon, juiced
  • 0.5 teaspoon red pepper flakes
  • 1 pinch cayenne pepper
  • 1 lemon, cut into wedges
Instructions:
  • Combine salt, lemon zest, and 3 cloves of garlic in a mortar and pestle. Pound until a paste forms, about 2 minutes. Mix in chopped basil, parsley, oregano, and thyme. Pound until mixture comes together, about 5 minutes.
  • Begin by gently drizzling 1 tablespoon of olive oil into the herb mixture and grind everything together until a sauce starts to form, which should take about 1 minute. Pour in the remaining 3 tablespoons of olive oil and stir the mixture well until thoroughly combined, adjusting the olive oil amount to achieve a thick yet pourable consistency.
  • In a large bowl, toss shrimp with 2/3 of the sauce until evenly coated, reserving 1/3 for later. Refrigerate shrimp in a sealed bag for 2 to 3 hours. Keep the leftover sauce covered in the refrigerator.
  • Get your outdoor grill sizzling hot and give the grate a light coating of oil.
  • Skewer the shrimp, making sure to pierce each one twice - first through the larger part, then through the smaller part. Grill the skewers until the shrimp turn bright pink, opaque, and the exterior starts to caramelize, approximately 2 to 3 minutes per side. Transfer the cooked skewers to a serving platter.
  • Transfer the leftover sauce to a mixing bowl. Combine with 1 tablespoon of olive oil, lemon juice, red pepper flakes, cayenne pepper, salt, and black pepper. Drizzle the sauce over the shrimp and garnish with lemon wedges before serving.
