Try Chef John's crispy beef hash for a delicious twist on a classic favorite.
Ingredients:
  • 2 large russet potatoes, peeled
  • 1 tablespoon salted butter
  • 1 pound ground beef
  • salt to taste
  • 0.75 cup diced yellow onions
  • 0.75 cup diced button mushrooms
  • freshly ground black pepper to taste
  • 1 pinch dried rosemary
  • 0.5 cup diced red bell pepper
  • 0.5 cup diced poblano pepper
  • 0.5 cup thinly sliced green onions
Instructions:
  • Trim the bottom of each potato to create a flat surface. Slice the potatoes vertically into 1/4-inch sticks, then cut them horizontally to dice them uniformly. Place the diced potatoes in a bowl of cold water.
  • In a skillet over high heat, melt the butter with the olive oil. Add the ground beef and cook for about 5 minutes, using a flat-edge utensil to break it up until crumbly.
  • After draining the potatoes, stir them into the beef along with a generous pinch of salt. Cook over medium-high heat, stirring occasionally, until the potatoes start to soften, about 5 to 7 minutes. Press the mixture evenly into the skillet and allow it to develop a crispy crust by pressing it down against the bottom of the pan.
  • Mix in the onions and mushrooms, sprinkle with an additional pinch of salt, and sauté until they soften and develop a lovely color, for about 5 to 7 minutes. Finally, season with black pepper, cayenne, and rosemary.
  • Add vibrant bell pepper, spicy poblano pepper, and sprinkle one more pinch of salt. Sauté until peppers are tender and all ingredients are golden and crispy, approximately 5 minutes.
  • Add green onions and continue cooking briefly. Remove from heat and serve.
