Chef John's Homemade Chicken Stock

Homemade chicken stock: rich flavor, golden color - perfection!
Ingredients:
  • 3 pounds chicken necks and backs
  • 1 large onion, skin on, sliced into 6 segments
  • 2 carrots, cut into chunks
  • 1 stalk celery, cut into chunks
  • 2 cloves garlic, peeled
  • 4 sprigs chopped fresh thyme
  • 1 bay leaf
  • 3 quarts cold water
Instructions:
  • In a large stockpot, combine chicken, onion, carrots, celery, garlic, thyme, and bay leaf. Pour water into the pot and bring to a gentle simmer over medium-low heat, making sure not to boil. Skim off any foam that rises to the surface and lower the heat to low.
  • Simmer the mixture on low heat for 12 hours, occasionally skimming off any foam.
  • Allow the stockpot to cool for 1 hour off the heat.
  • Strain the stock carefully and pour it into food-safe containers.
