Grilled kofta kebabs with a delicious blend of beef, lamb, and spices by Chef John for maximum flavor.
Ingredients:
  • 1 slice whole grain bread, toasted
  • 0.5 medium yellow onion, diced
  • 0.33 cup chopped Italian parsley
  • 4 cloves garlic, minced
  • 8 ounces ground beef
  • 4 ounces ground lamb
  • 1.25 teaspoons kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon paprika
  • 0.25 teaspoon ground cardamom
  • 0.125 teaspoon ground nutmeg
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons water
  • 4 bamboo skewers, soaked for at least 1 hour
Instructions:
  • Prepare all ingredients.
  • Dice the toasted bread slice into small pieces after cutting it into thin strips on a cutting board.
  • Combine onion, parsley, and garlic on top of diced bread on the cutting board; finely chop until it resembles tabbouleh.
  • Coat beef and lamb generously with a flavorful blend of kosher salt, black pepper, allspice, paprika, cardamom, nutmeg, and cayenne. Combine with onion mixture and water, then mix by hand until fully incorporated. Wrap tightly in plastic wrap and chill in the refrigerator for at least 1 hour or overnight.
  • Take the meat out of the fridge and form ¼ of the mixture into a ball using damp hands. Make a hole in the center with a bamboo skewer, then shape the meat into a smooth log, approximately 6 inches long and 2 inches wide.
  • Preheat the charcoal grill until the coals are very hot.
  • Grill the kebabs over high heat until beautifully browned and fully cooked, for around 12 minutes, flipping them every 3 minutes. Use an instant-read thermometer to confirm they reach an internal temperature of 145 degrees F (63 degrees C).
  • Present your dish and savor every bite.
