Chef John's Kumquat Marmalade

Easy homemade kumquat marmalade with lemon, sugar, cayenne pepper, and star anise for a uniquely delicious flavor.
Ingredients:
  • 2 cups prepared kumquats
  • 1 cup white sugar
  • 1 cup cold water
  • Zest and juice of 1 lemon
  • 1 star anise (I removed it after 10 minutes of simmering)
  • small pinch of cayenne
Instructions:
  • Cut kumquats into quarters lengthwise, discarding white center membrane and seeds.
  • Chop the quarters into small pieces.
  • In a pot, combine kumquats, sugar, water, lemon zest (white part only), lemon juice, star anise, and a pinch of cayenne. Mix well and let it sit at room temperature for 2-3 hours to macerate, or refrigerate overnight.
  • Place pot over medium-high heat and bring mixture to a simmer, stirring occasionally. Reduce heat to medium and cook for 10 minutes. Keep stirring often until mixture thickens enough to briefly see the bottom of the pan when scraped with a spatula, 30 to 40 minutes. Mixture should reach 215 to 220 degrees F (120 to 125 degrees C). Remove from heat and allow to cool for 5 to 10 minutes.
  • Transfer the fragrant warm marmalade into sanitized jars, seal them, then allow them to cool down to room temperature before placing them in the refrigerator to chill completely.
