Indulgent lemon bars with rich custard on a buttery shortbread crust.
Ingredients:
  • 0.5 cup unsalted butter at room temperature
  • 0.25 cup confectioners' sugar
  • 0.25 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 2 large eggs
  • 1 large egg yolks
  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 0.25 cup freshly squeezed lemon juice
  • 1 tablespoon freshly grated lemon zest
  • 1 teaspoon confectioners' sugar, or to taste
Instructions:
  • Place an oven rack in the middle position and preheat the oven to 350 degrees F (175 degrees C. Lightly grease an 8x8-inch baking dish.
  • Prepare the crust by combining flour and butter in a large bowl using the back of a spatula or wooden spoon. Add confectioners' sugar, vanilla, and salt until it looks like slightly crumbly cookie dough. Moisten your fingers with water, press the dough into the baking dish, and use a fork to prick holes all over the crust.
  • Bake in the preheated oven on the middle rack until edges are just golden brown, approximately 22 minutes. Let it cool.
  • Prepare the custard filling by combining eggs and egg yolks in a medium bowl until well mixed. Whisk in white sugar and flour until the mixture is smooth. Add lemon juice and zest, then whisk for 2 minutes until well incorporated. Pour the custard over the warm crust.
  • Bake in the center of the oven until the custard is set with a delicate white sugary crust on top, for approximately 25 minutes. Allow to cool completely before slicing into bars.
  • Heat your knife in hot water, then slice into 16 squares. Sprinkle the bars with confectioners' sugar for a sweet finish.
