Elevate your dish with Chef John's tangy lemon caper butter sauce, enhanced with summer savory, ideal for pairing with fish or chicken.
Ingredients:
  • 1 tablespoon capers
  • 0.5 teaspoon butter
  • 2 lemons, juiced
  • salt and ground black pepper to taste
  • 2 tablespoons cold butter
  • 1 teaspoon chopped fresh savory
Instructions:
  • Smash capers in a small bowl using the back of a spoon.
  • In a skillet over medium-high heat, melt 1/2 teaspoon of butter until it foams and turns golden. Quickly sauté capers for about 15 seconds until fragrant. Stir in lemon juice, simmer until the liquid reduces by one-third (1 to 3 minutes), season with salt and pepper, then remove from heat.
  • Combine chilled butter and fragrant savory herbs with the lemon mixture, stirring continuously until the butter is fully melted and the sauce becomes glossy and thick, which should take about 1 minute.
