Create a simple and refreshing summer treat using the Italian granita technique for a delightful mix of light texture and vibrant flavor.
Ingredients:
  • 4 cups cold water
  • 0.875 cup white sugar
  • 2 tablespoons lemon zest
  • 1 cup freshly squeezed lemon juice
  • 1 teaspoon lemon extract
Instructions:
  • In a pot over medium heat, combine sugar and water, whisking until sugar dissolves and water turns clear. Remove from heat once dissolved. Stir in lemon zest while still warm. Let cool to room temperature before mixing in lemon juice.
  • Combine the lemon juice and lemon extract, then pour the mixture into a 9x13 inch baking pan. Place it in the freezer until ice begins to form around the edges, which should take about 40 to 45 minutes. Stir the ice with a fork every 20 to 30 minutes until it reaches your desired texture, which will take around 2 1/2 to 3 hours.
