Chef John's twist on Hawaiian comfort food: juicy burger patty in gravy, topped with a fried egg on rice.
Ingredients:
  • 2 (4 ounce) patties ground beef
  • 1 pinch salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 1.5 cups beef stock
  • 4 teaspoons soy sauce
  • 1 teaspoon Worcestershire sauce
  • 4 teaspoons cornstarch
  • 2 teaspoons ketchup
  • 2 teaspoons white sugar
  • 2 drops sesame oil, or to taste
  • 2 teaspoons unsalted butter, divided
  • 2 tablespoons minced green onions, white and light green parts only
  • 2 cups hot cooked white rice
Instructions:
  • Season the patties generously with salt, pepper, and a hint of cayenne, then let them rest.
  • Combine beef stock, soy sauce, Worcestershire sauce, cornstarch, ketchup, sugar, and sesame oil in a bowl and let the flavors mingle.
  • In a skillet over medium-high heat, melt 1 teaspoon of butter. Cook the patties until the bottoms are nicely browned for about 5 minutes. Flip the patties, add green onions, and cook until both the beef and onions are browned, about 4 to 5 minutes. Transfer patties and most of the green onions to a plate.
  • Pour the rich beef stock mixture into the skillet, stirring and scraping up the flavorful browned bits until the sauce thickens, approximately 2 minutes. Then, lower the heat and set aside the luscious gravy for later use.
  • In a separate skillet over medium heat, melt the remaining butter. Add the eggs and cook side-by-side until the egg whites are cooked through while keeping the yolks runny.
  • Spoon rice into 2 serving bowls. Top with patties, pour gravy over, and finish with fried eggs.
  • Serve the dish while piping hot for the most satisfying and delicious experience!
