Spicy-sweet nectarine salsa with red and jalapeño peppers, cilantro by Chef John.
Ingredients:
  • 1 cup finely diced nectarine
  • 0.5 cup finely diced red bell pepper
  • 0.33333334326744 cup finely diced onions
  • 2 tablespoons finely diced jalapeno pepper
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 2 teaspoons olive oil
  • 0.5 teaspoon salt, plus more to taste
  • 1 pinch cayenne pepper
  • 1 pinch freshly ground black pepper
Instructions:
  • In a medium bowl, mix nectarine, bell pepper, onions, jalapeño pepper, and cilantro. Add lime juice, olive oil, salt, and cayenne pepper. Cover with plastic wrap and refrigerate for 30 minutes to 1 hour for the flavors to meld.
  • Before serving, generously sprinkle in the fragrant black pepper, elevating the flavors of the dish. Adjust the seasoning with a touch more salt, if desired.
