Chef John's Pão de Queijo (Brazilian Cheese Bread)

Bake Chef John's simple and delicious gluten-free Brazilian cheese rolls, crispy outside with a cheesy and chewy center.
Ingredients:
  • 2.25 cups tapioca flour, or more as needed
  • 0.66666668653488 cup milk
  • 0.5 cup mild olive oil
  • 1 teaspoon kosher salt
  • 2 large eggs, beaten
  • 2 ounces freshly grated mozzarella cheese
  • 2 ounces finely grated Parmigiano-Reggiano cheese
  • 1 pinch cayenne pepper
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet with a handy silicone mat.
  • In a mixing bowl, prepare by placing the tapioca flour; set aside.
  • In a pan, gently heat milk, olive oil, and salt until simmering. Quickly pour the mixture over tapioca in a bowl. Stir until a slightly sticky dough comes together. Allow to rest for 5 minutes before proceeding.
  • Combine eggs, mozzarella, Parmesan cheeses, and cayenne in the bowl until fully mixed. Use a medium ice cream scoop to place dough on the baking sheet. Smooth out any rough edges with a wet finger if you like.
  • Bake at the perfect temperature until the rolls are wonderfully puffed and turn a beautiful golden hue, approximately 20 minutes. Allow them to cool for 5 minutes before serving warm.
