Try Chef John's easy and delicious recipe for sharp Cheddar cheese gougeres, French cheese puffs.
Ingredients:
  • 0.5 cup water
  • 0.25 cup butter
  • 1 pinch salt
  • 0.5 cup flour
  • 2 large eggs
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon ground black pepper
  • 0.5 cup shredded sharp Cheddar cheese, divided
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and place a silicone baking mat on a baking sheet.
  • Combine water, butter, and salt in a pot and bring to a gentle simmer. Then, lower the heat to medium and whisk in the flour until a smooth dough forms, which should take 2 to 3 minutes. Finally, transfer the dough to a bowl and let it cool until warm for about 5 to 10 minutes.
  • Combine 1 whisked egg with thyme and black pepper in cooled dough until fully mixed. Incorporate the second egg into the dough. Mix in 3/4 of the cheese until combined. Scoop 1-inch dough balls onto baking sheet and sprinkle the remaining cheese on top.
  • Bake in the oven until beautifully golden and puffed, about 15-20 minutes.
