Chef John's easy Buffalo chicken spread with blue cheese crostini is a game day favorite, made with shredded chicken thighs. Perfect for your party!
Ingredients:
  • 1.5 pounds bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 0.25 cup unsalted butter
  • 0.25 cup Louisiana-style hot sauce
  • 3 tablespoons water
  • 0.33333334326744 cup finely chopped celery
  • 1 pinch cayenne pepper, or to taste
  • 1 baguette, cut into 1/4 inch slices
  • 0.25 cup melted butter
  • 0.5 cup blue cheese, or to taste
  • 0.25 cup butter, at room temperature
Instructions:
  • Preheat a saucepan over high heat. Brown the chicken thighs skin-side down, seasoning generously with salt, for about 5 minutes. Flip the thighs once the skin releases easily. Stir in butter, Louisiana hot sauce, and water until the sauce is smooth and the butter has melted.
  • Lower the heat to low, cover, and simmer for about 1 1/2 hours until the meat easily pulls off the bone. Remove from heat, shred the meat into smaller pieces using tongs, and stir it into the sauce. Allow the mixture to cool to room temperature for at least 20 minutes.
  • Place the meat in a mixing bowl, shred it into smaller pieces, and remove any bones, cartilage, or skin.
  • 1. Heat the sauce in the pan over medium-high heat until it boils. Allow it to simmer until slightly thickened, approximately 2 minutes. Combine the sauce with the chicken in a bowl and mix well. Adjust seasoning by adding salt, cayenne, and hot sauce to taste. Finally, add the celery and mix again.
  • Fill a charming pint-sized jar or crock with the delightful chicken mixture, adding a dollop of hot sauce for extra flair if desired. Seal the jar and chill until it's time to impress. Just before serving, let it sit at room temperature for 30 minutes to enhance the flavors.
  • While the oven preheats to 350 degrees F (175 degrees C, slice the baguette and generously brush the tops with butter before placing them on a baking sheet.
  • Bake until the edges turn golden brown, approximately 20 minutes in the preheated oven.
  • Combine butter and blue cheese in a small bowl until smooth and mixed.
  • Take out the toasted baguette slices and allow them to cool slightly while keeping the oven on. Spread the blue cheese mixture on top and bake the crostini until they are golden brown and crispy, for 10 to 12 minutes. Serve with the Buffalo chicken spread.
