Delicious Pavlova dessert: airy meringue with sweet, gooey, and crunchy layers, topped with whipped cream and strawberries.
Ingredients:
  • 0.75 cup sugar
  • 2 teaspoons cornstarch
  • 3 egg whites, at room temperature
  • 1 teaspoon vanilla extract
  • 0.75 teaspoon white vinegar
  • 2 cups heavy cream
  • 3 tablespoons confectioners' sugar
  • 1 pint whole strawberries, stems removed
Instructions:
  • Heat the oven to 250°F (120°C) and prepare a baking sheet with a silicone baking mat or parchment paper.
  • In a bowl, combine sugar and cornstarch. In a separate bowl, beat egg whites until foamy and ribbony, about 2 to 3 minutes. Gradually add sugar mixture in batches, whisking well after each addition until egg whites are glossy and thick.
  • Whisk in 1 teaspoon of vanilla and vinegar until stiff peaks form when lifting the beater or whisk straight up, about 2 to 3 minutes.
  • Dollop the egg white mixture onto the lined baking sheet and shape it into a 2x6-inch disk.
  • After baking in the preheated oven for 1 hour, allow the Pavlova to cool for an additional hour with the oven door slightly open.
  • Place the cooled Pavlova onto a serving plate.
  • In a bowl, whisk together cream, sugar, and the remaining teaspoon of vanilla until soft peaks form in 3 to 4 minutes. Spread the mixture over the Pavlova and garnish with fresh strawberries.
