Indulgent pecan pie with rich toffee filling and crispy crust by Chef John.
Ingredients:
  • 1 prepared pastry dough for 9-inch pie
  • 2 cups pecan halves
  • 1 cup light brown sugar
  • 0.5 cup butter
  • 0.5 cup white sugar
  • 0.5 cup light corn syrup
  • 3 tablespoons all-purpose flour
  • 2 tablespoons milk
  • 1 tablespoon bourbon
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 3 large eggs, whisked
Instructions:
  • Preheat the oven to 350°F (175°C) to ensure the perfect cooking temperature.
  • Place the pie dough in a 9 1/2-inch glass pie dish, crimp the edges, line with parchment paper, and add pie weights to cover the bottom evenly.
  • After baking in the preheated oven for 20 minutes, transfer the parchment paper and pie weights to a bowl. Continue baking the crust until it is lightly golden and set, for approximately 10 more minutes.
  • Arrange pecans on a baking sheet and bake until lightly toasted, approximately 7 to 8 minutes.
  • Combine brown sugar, butter, white sugar, corn syrup, flour, milk, bourbon, vanilla extract, and salt in a saucepan over medium heat. Bring to a boil, whisking constantly. Remove from heat and let cool for 5 to 10 minutes.
  • In a large bowl, vigorously whisk eggs. Gradually pour sugar mixture into the eggs while whisking continuously.
  • Evenly layer pecans on the crust, then drizzle sugar mixture on top. Gently mix with a spatula to ensure all nuts are coated.
  • Bake the pie in a preheated oven until the crust turns golden brown and the pie sets, for about 40 to 45 minutes. Allow it to cool completely before serving.
