Indulge in Chef John's no-bake pecan pie energy bites with dates, oats, and pecans for a quick, tasty, and energy-boosting treat.
Ingredients:
  • 1 cup pecan halves
  • 0.333 cup rolled oats
  • 1 cup pitted Medjool dates
  • 0.125 teaspoon ground cinnamon
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon vanilla extract
  • 1 tablespoon maple syrup
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet with parchment paper.
  • Spread a single layer of pecans on the baking sheet and sprinkle with rolled oats. Bake in the preheated oven for about 10 minutes until toasted. Let cool completely before using.
  • Combine pecans, oats, dates, cinnamon, salt, vanilla extract, and maple syrup in a food processor and pulse until nuts reach desired consistency.
  • Form the mixture into 12 tightly-packed 2-inch balls and chill before serving.
