Chef John's foolproof prime rib recipe delivers juicy, tender beef cooked to a perfect medium rare.
Ingredients:
  • 1 (4 pound) prime rib roast
  • 0.25 cup unsalted butter, softened
  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon herbes de Provence
  • kosher salt to taste
Instructions:
  • Allow the prime rib roast to come to room temperature for 2 to 4 hours on a plate.
  • Preheat the oven to a blazing 500 degrees F (260 degrees C).
  • Mix butter, pepper, and herbes de Provence in a bowl until fully combined. Evenly spread the seasoned butter over the entire roast. Generously season the roast with kosher salt.
  • Roast the 4-pound meat in the oven for 20 minutes. Adjust the time based on the weight: multiply the weight by 5 for larger or divide by 4 for smaller roasts.
  • After turning off the oven, allow the roast to rest in the closed oven for 2 hours.
  • Slice the oven-roasted meat and elegantly present it for serving.
