Rich, flavorful au jus made with beef drippings and broth is the perfect accompaniment for prime rib in Chef John's recipe.
Ingredients:
  • 0.25 cup beef drippings
  • 1.5 tablespoons all-purpose flour
  • 2 cups beef broth
  • salt and ground black pepper to taste
Instructions:
  • Heat drippings in a skillet over medium-high heat until melted. Whisk in flour and cook, constantly whisking, until the mixture thickens, about 3 minutes.
  • Gradually pour in beef broth while whisking constantly. Increase heat to high and bring to a boil, then season with salt and pepper to taste.
