Slow-Cooker Hot Roast Beef Sandwiches au Jus

Ingredients:
  • 2 1/2-pound beef eye of round roast, trimmed of fat
  • 6 cloves garlic, peeled
  • 2 teaspoons coarsely ground pepper
  • 1 large onion, thinly sliced
  • 1/2 cup condensed beef broth (from 10 1/2-ounce can)
  • 10 kaiser rolls, split and toasted
  • 2 large tomatoes, each cut into 5 slices
Instructions:
  • Create 6 evenly spaced deep slits in the beef roast using a sharp knife. Fill each slit with a clove of garlic. Evenly sprinkle pepper over the entire roast and rub it in.
  • Prepare the slow cooker by giving it a light coating of cooking spray. Arrange the onion slices inside, then pour the broth over them. Finally, place the beef on top.
  • Slow cook on low heat for 6 to 8 hours with the dish covered.
  • Take out the beef from the cooker and transfer it to a cutting board. Slice the beef thinly across the grain. Put the sliced beef back into the cooker to keep it moist. Fill each toasted roll with beef, onion, and a tomato slice. If desired, drizzle a little broth from the cooker over the beef before serving.
