Beef au Jus Sandwiches

French-inspired juicy beef sandwich.
Ingredients:
  • 1 large sweet onion (Bermuda, Maui, Spanish, Walla Walla), sliced
  • 1 can (14 ounces) beef broth
  • 4-pound beef boneless rump roast, trimmed of fat
  • 1 envelope (0.7 ounce) Italian dressing mix
  • 1/4 teaspoon black pepper
  • 12 hoagie buns, split
  • 1 large green bell pepper, thinly sliced
  • 12 slices (1 ounce each) provolone cheese, cut in half
Instructions:
  • In a 3 1/2- to 4-quart slow cooker, combine onion slices and broth. Brush the beef roast with vinegar on all surfaces, then place it on top of the onions. Sprinkle the roast with dry dressing mix, salt, and pepper.
  • Slow cook on low heat for 8 to 10 hours or until the beef is tender.
  • Shortly before serving, carefully take out the beef from the cooker and transfer it to a cutting board. Slice the beef thinly across the grain, then add the slices back to the cooker and thoroughly combine.
  • To assemble, scoop the flavorful beef mixture onto soft buns, topping it with crisp bell pepper slices and gooey cheese. The beef mixture can be kept warm on a low heat setting for up to 4 hours.
