Prepare perfect poached eggs in advance for effortless Eggs Benedict.
Ingredients:
  • 1 teaspoon champagne vinegar
  • 0.5 teaspoon salt
  • 2 eggs, as fresh as possible
Instructions:
  • Ice water beckons as it shimmers in a waiting bowl.
  • Fill a saucepan with cold water and bring to a gentle simmer over medium heat. Stir in vinegar and salt, then reduce heat to low.
  • Crack each egg into an individual ramekin. Carefully pour each egg into the gently simmering water. Allow the egg white to set for 1-2 minutes, then use a silicone spatula to lift the egg gently to prevent sticking. Cook until the white is set and the yolk is runny, around 6 minutes.
  • Remove the poached egg from the water with a slotted spoon and transfer it to a bowl of ice water to halt the cooking. Reheat the egg in gently simmering water for 1 1/2 to 2 minutes, then lift it out with a slotted spoon. Gently tap the spoon on a paper towel to remove any excess water before serving.
