Savor Chef John's mouthwatering creation: a fusion of Monte Cristo and Croque Madame sandwiches featuring hot honey ham, melted Havarti, French toast, and a perfectly poached egg.
Ingredients:
  • 2 large eggs
  • 0.5 cup heavy cream
  • 1 pinch cayenne pepper
  • 1 pinch freshly grated nutmeg
  • 1 teaspoon freshly grated lemon zest
  • 4 slices white bread
  • 8 thin slices Havarti cheese
  • 4 ounces thinly sliced honey baked ham, halved
  • 2 tablespoons butter
  • 0.5 teaspoon champagne vinegar
Instructions:
  • In a bowl, whisk together egg, heavy cream or milk, salt, cayenne pepper, nutmeg, and lemon zest until a thin and runny batter forms. If needed, add 2 more tablespoons of milk or cream.
  • 1. Toast the bread until golden brown, then top each slice with Havarti cheese. Divide the ham evenly between the two sandwiches. 2. Bring the sandwich halves together and dip into the batter. Ensure each side is coated evenly, then transfer to a plate. 3. Repeat the process with the second sandwich.
  • 1. Fill a large saucepan with 2 inches of water and bring it to a boil. Meanwhile, melt butter in a skillet over medium heat. Grill sandwiches in the butter until crispy and cheese is gooey, about 4 minutes per side.
  • Lower the saucepan's heat and add the vinegar, maintaining a soft simmer. Crack an egg into a small bowl and slide it into the simmering water just above the surface. Repeat with another egg. Poach until the egg white is set and the yolk is thickened but not firm, about 2 1/2 to 3 minutes.
  • Place the sandwiches on plates and sprinkle with cayenne pepper. Use a slotted spoon to remove the eggs from the water, gently pat dry with a kitchen towel, and then place one egg on each sandwich. Dust with more cayenne pepper before serving.
