Try this quick and comforting miso bechamel breakfast-for-dinner fusion meal for a unique twist on comfort food!
Ingredients:
  • 8 rashers streaky bacon
  • 30g miso
  • 40.00 ml plain flour
  • 250ml milk
  • 4 small flatbreads
  • 2 eggs, fried
  • Black sesame seeds, to serve
  • Coriander leaves, to serve
Instructions:
  • Preheat the oven to 220C. Add bacon to a large cold frypan and cook over medium heat until crisp, about 4-5 minutes. Remove bacon and drain on paper towel, saving 2 tablespoons of fat.
  • Heat reserved fat in a saucepan over medium heat, then whisk in miso paste and flour. Cook for 1-2 minutes, gradually whisk in milk, and cook for another 3-4 minutes until thickened. Cool slightly off the heat before using.
  • Layer one flatbread with a quarter of the bechamel and 2 bacon rashers. Add another flatbread, 2 bacon rashers, and another quarter of the bechamel. Repeat to make 2 sandwiches. Bake on a lined tray for 10 minutes until golden and bubbly.
  • Add a golden fried egg on top and sprinkle with aromatic sesame seeds and fresh coriander leaves.
