Try this easy and flavorful roasted miso butter snapper with broccolini - all in one dish!
Ingredients:
  • 24.00 gm white miso paste
  • 25g softened unsalted butter
  • 2 x 180g skinless snapper fillets
  • 1 tsp sesame oil
  • 2 small red chillies, thinly sliced, plus extra thinly sliced to serve
  • 21.00 gm soy sauce
  • 18.20 gm peanut oil
  • 2 bunches broccolini, halved lengthways
  • 150g mixed mushrooms (shimeji and enoki), stalks trimmed
  • 3.00 gm sesame seeds
  • Juice of 1/2 lime
  • Thinly sliced spring onion, to garnish
Instructions:
  • Preheat the oven to 200C and line a baking dish with baking paper.
  • Mix miso and butter together and spread it over the snapper. In a bowl, combine sesame oil, chili, soy sauce, and peanut oil. Toss broccolini, mushrooms, and sesame seeds in the mixture, then spread them over the bottom of the baking dish. Place the snapper on top. Roast for 18-20 minutes until the snapper is cooked through and the broccolini is tender.
  • Before serving, generously drizzle lime juice over the dish and garnish with fresh spring onions and additional chili for added flavor and a pop of color.
