Elevate your sandwich game with the indulgent and classic Croque Madame: Gruyere cheese, Black Forest ham, velvety bechamel, and a perfect poached egg.
Ingredients:
  • 4 tablespoons salted butter, softened, divided
  • 1.5 tablespoons all-purpose flour
  • 1 cup milk
  • 2 ounces shredded Gruyère cheese
  • 0.25 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
  • 0.125 teaspoon ground nutmeg
  • 4 slices white bread, lightly toasted
  • 2 teaspoons Dijon mustard
  • 2 thin slices Black Forest ham
  • 2 large eggs
  • 1 tablespoon water
  • 1 teaspoon chopped fresh dill, or to taste
Instructions:
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • In a saucepan over medium-low heat, melt a luxurious 1 1/2 tablespoons of butter until sizzling. Stir in flour until it gently browns, taking around 3 minutes. Pour in milk, bringing it to a gentle boil while whisking non-stop. As soon as it boils, lower the heat and allow it to simmer for 5 minutes. Add in half of the indulgent Gruyère cheese, along with a pinch of salt, pepper, and nutmeg, melting the cheese in about 2 minutes. Take it off the heat and set it aside for a heavenly touch to your dish.
  • Butter the bread slices, add cheese sauce and ham to 2 slices, then butter and mustard to the other 2 slices, and top with Gruyère. Place all on a baking sheet.
  • Broil in the preheated oven until cheese is almost melted, for 2 to 3 minutes. Then, place toast slices together to make 2 sandwiches. Pour remaining cheese sauce over each sandwich. Return to the broiler until sauce starts to brown, about 2 minutes.
  • While the sandwiches are broiling, melt the remaining butter in a nonstick skillet over medium-high heat. Carefully crack 2 eggs into the skillet, ensuring they remain separate. Season with salt and pepper, add water, cover, and baste until whites are cooked through but yolks are still runny, approximately 2 minutes.
  • Place a perfectly cooked egg on top of each sandwich, then generously sprinkle with fresh dill for added flavor. Serve immediately to enjoy while hot.
