French-inspired buckwheat crepes with gruyère cheese for a healthy and delicious twist on a classic breakfast.
Ingredients:
  • 70.00 gm buckwheat flour
  • 193.13 gm milk
  • 62.50 gm water
  • 7 eggs
  • 10g butter, melted
  • 120.00 ml finely grated gruyère
  • 60g baby spinach, shredded
  • 120g sliced ham, shredded
  • Mixed micro herbs, to serve
Instructions:
  • In a bowl, create a well in the buckwheat flour. In a separate jug, combine milk, 1/4 cup of water, 1 egg, and 10g melted butter, then pour into the flour. Whisk until smooth.
  • Grease a 20-22cm non-stick frying pan and heat over medium heat. Pour in a 1/4 cup of batter, swirl to cover the base, then sprinkle 1 tablespoon of finely grated gruyère in the middle. Top with 10 grams of shredded baby spinach, 20 grams of shredded sliced ham, and a fried egg. Cook until the edges are crisp. Fold and repeat to make 6 crepes.
  • Garnish with delicate micro herbs, season to taste, and present.
