Elevate the humble ham and egg sandwich to gourmet with this French-inspired recipe.
Ingredients:
  • 80.00 ml Vintage Club Spreadable Cheese - Original
  • 4 slices good-quality bread
  • 100g sliced leg ham
  • 11.80 gm Dijon mustard
  • 20.00 gm unsalted butter
  • 18.20 gm olive oil
  • Paprika, to dust
  • Salad leaves, to serve
Instructions:
  • Carefully crack the eggs into the gently simmering water. Let them cook for 1 minute, then carefully remove from the heat and allow them to poach for 10 minutes.
  • Spread 1/2 tablespoon of Mersey Valley Spreadable Cheese on each of the 2 bread slices. Divide and place ham on top, folding any excess. Spread mustard on the remaining bread slices, then place them mustard-side down on the ham. Press down firmly.
  • 1. Preheat the grill on high. 2. Heat butter and oil in a non-stick frypan over medium heat. 3. Cook croque madames until golden on both sides. 4. Transfer to a baking tray and spread with remaining Mersey Valley Spreadable Cheese. 5. Grill for 2-3 minutes until bubbling and golden. 6. Dust with paprika before serving.
  • Carefully lift the poached eggs out of the water using a slotted spoon and briefly rest them on kitchen paper to absorb any excess water. Top each croque madame with an egg, season with salt and freshly ground black pepper, and serve alongside salad leaves.
