Modern twist on French cassoulet: Quick version with chicken thighs, canned beans, and bacon for easy prep and delicious flavors.
Ingredients:
  • 4 ounces bacon, cut into 1 inch pieces
  • 8 ounces smoked sausage, sliced
  • 12 ounces boneless, skinless chicken thighs, cubed
  • 1 onion, diced
  • salt and pepper to taste
  • 2 cups chicken broth, plus more if needed
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 1.5 teaspoons minced fresh rosemary
  • 1.5 teaspoons minced fresh thyme
  • cayenne pepper to taste
  • 0.25 cup melted butter
  • 1 cup bread crumbs
  • 0.5 cup finely grated Parmigiano-Reggiano
Instructions:
  • Place bacon slices in a large skillet over medium heat. Cook for 10-12 minutes until almost crispy, then transfer to a bowl, keeping the flavorful grease in the pan.
  • Add sausage slices and cook for 3-4 minutes until slightly browned. Introduce chicken thigh pieces and sauté for 5 minutes until golden. Transfer meats to a plate with bacon. Dispose of the oil, leaving the pan uncleaned.
  • Sauté chopped onion over medium-low heat for 5 minutes until translucent. Pour in 1 cup of chicken stock.
  • Mash a portion of the beans in a small bowl, then mix all the beans into the pan.
  • Add a pinch of cayenne along with fragrant rosemary and thyme to the pan. Follow by gently placing the reserved meat back into the pan. Pour in the remaining cup of stock, adding more if necessary to cover the ingredients. Let it come to a gentle simmer.
  • Combine bread crumbs, Parmigiano-Reggiano, and melted butter in a small bowl, blending them to perfection.
  • Preheat the broiler in the oven and position the rack 7 inches below the heat source.
  • Top the cassoulet with half of the breadcrumb mixture, then broil for approximately 5 minutes until golden brown.
  • Take out the pan from the oven and press down the bread crumbs into the cassoulet. Sprinkle the remaining bread crumb mixture on top. Put the pan back in the oven and broil for another 5 minutes until golden brown.
  • Turn off the broiler and allow the dish to rest in the oven for 15 minutes. Then, take it out and let it sit for another 5 minutes before serving. Enjoy your meal.
