Indulgent Rocky Road candy with fluffy marshmallows, rich dark chocolate, and nutty crunchiness. Perfect for holidays or gifting.
Ingredients:
  • 1.5 cups dark chocolate chips
  • 3 tablespoons unsalted butter, cubed
  • 2 teaspoons maple syrup
  • 1.5 cups miniature marshmallows
  • 1.25 cups lightly salted roasted almonds
  • 0.25 cup unsweetened cocoa powder
Instructions:
  • In a heat-safe bowl, melt dark chocolate chips, butter, and maple syrup together over a simmering saucepan of water. Resist the urge to stir and let the ingredients blend into a smooth sauce.
  • As the mixture melts, prepare the 8x8-inch baking pan by lining it with plastic wrap.
  • Gently fold in melted chocolate mixture with a spatula until glossy and velvety. Take off the heat and mix in marshmallows and almonds until well incorporated.
  • Pour the mixture into the pan, spreading evenly without smoothing or pressing down to maintain a rustic texture on top. Allow to cool at room temperature for approximately 30 minutes. Wrap with plastic wrap and refrigerate until well chilled and firm, which usually takes about 2 hours.
  • Sprinkle cocoa powder evenly on top and divide into 16 squares.
