Indulgent Salisbury steak by Chef John. Pair with creamy mashed potatoes and crisp green beans for a cozy TV meal experience.
Ingredients:
  • 1 pound 85% lean ground beef
  • 0.5 cup plain bread crumbs
  • 1 large egg, beaten
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1 teaspoon soy sauce
  • 0.5 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper, or to taste
  • 2 tablespoons salted butter
  • 12 large white button mushrooms, sliced
  • 1 cup diced onion
  • salt to taste
  • 2 tablespoons all-purpose flour
  • 3 cups high-quality, low-sodium beef broth
Instructions:
  • Combine ground beef, bread crumbs, egg, ketchup, Worcestershire sauce, mustard, soy sauce, pepper, and cayenne in a mixing bowl. Use a fork or your hands to mix until fully combined. Cover with plastic wrap and chill for a minimum of 2 hours or overnight before cooking.
  • As the steaks near readiness, let's prepare the gravy: Heat butter in a large nonstick skillet over high heat. Sauté mushrooms, onion, and salt until nicely browned, about 5 to 8 minutes. Lower the heat to medium, then add flour and stir for 3 minutes.
  • Combine broth, ketchup, and Worcestershire sauce in the pot and bring to a high simmer. Reduce heat to medium and cook for about 10 minutes, stirring occasionally, until the gravy slightly thickens. Taste and adjust salt to your liking.
  • Pour the gravy into a liquid measure and use a spatula to scrape the pan clean.
  • Prepare the steaks: Take the meat out of the fridge and divide it into four equal parts. Shape each part into a 1/2-inch-thick oval patty using wet hands, then lightly season both sides with salt.
  • In a clean skillet over medium-high heat, melt butter. Add patties and cook until browned, about 2 to 3 minutes per side. Pour in gravy and bring to a simmer. Reduce heat to medium and cook until gravy is hot and steaks are no longer pink in the center, about 5 minutes. Ensure the internal temperature reaches at least 160 degrees F (70 degrees C) using an instant-read thermometer.
