Create a delicious homemade sourdough loaf with minimal effort, just plan ahead to have an active sourdough starter ready.
Ingredients:
  • 100 grams active sourdough starter
  • 394 grams bread flour
  • 250 grams water
  • 8 grams kosher salt
  • 2 tablespoons rice flour, or as needed
Instructions:
  • Collect all the ingredients needed for the recipe.
  • In a bowl, combine starter, bread flour, water, and salt until thoroughly mixed and sticky.
  • Cover the dish with shiny aluminum foil and allow it to rest for 4 hours at a cozy temperature of 70 to 75 degrees F (21 to 24 degrees C).
  • Uncover the dough and gently fold it over onto itself 3-4 times using moistened hands. Recover with foil and allow it to ferment for an additional 2 hours.
  • Coat the proofing basket (banneton) generously with rice flour.
  • Transfer the dough onto a lightly floured surface and shape it into a smooth ball using just enough flour to prevent sticking. Place the dough in the prepared basket with the smooth side facing down, then neatly pinch and smooth any rough edges towards the center to maintain a round shape.
  • Chill in the fridge for 12 hours to enhance flavor development.
  • Take the banneton out of the refrigerator and allow it to rest in a cozy spot until the dough springs back slowly and keeps a light indentation when poked gently with a finger, for approximately 3 to 5 hours.
  • Preheat the oven to 450 degrees F (230 degrees C) and line a rimmed baking sheet with parchment paper.
  • Sprinkle flour over the dough, then quickly turn the banneton over onto the baking sheet to release the dough onto parchment paper. Dust off any extra rice flour. Use a sharp knife to make a shallow slit across the top of the dough. Lightly mist the dough with water.
  • Bake in the preheated oven until beautifully golden, for 25-30 minutes.
  • Place the loaf onto a wire rack and allow it to cool thoroughly before cutting into slices.
