Delicious red clam sauce ready in 15 minutes, perfect for angel hair or spaghetti.
Ingredients:
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 2 tablespoons capers
  • 1 tablespoon anchovy paste
  • 1 teaspoon red pepper flakes
  • 1 (24 ounce) jar tomato pasta sauce
  • 0.25 cup water
  • 1 cup good-quality crisp white wine
  • 2 (6.5 ounce) cans chopped clams, drained with juice reserved
  • 1 pound dry spaghetti
  • 0.25 cup freshly grated Parmesan cheese
  • Chopped fresh basil leaves or parsley
Instructions:
  • Drizzle olive oil into a cold skillet, then add garlic, capers, anchovy paste, and red pepper flakes. Cook over medium heat, stirring constantly until the oil is infused with the flavors, about 5 minutes. Be careful not to brown the garlic. Stir in tomato sauce and rinse out the jar with 1/4 cup of water, adding it to the skillet along with the wine and clam juice (reserve the clams). Simmer until slightly reduced and thickened, about 7 to 9 minutes.
  • 1. Boil a large pot of salted water. Add spaghetti and cook until almost al dente, stirring occasionally, about 1 minute less than package instructions. Drain and return spaghetti to the pot off the heat.
  • Gently combine clams with the sauce. Pour the mixture over the pasta and stir well. Cover the pot and let it rest off the heat for 3 minutes to let the pasta absorb the flavors. Finish by folding in Parmesan cheese and garnish with fresh chopped basil or parsley. Enjoy!
