Chef John's irresistible garlic noodle recipe features simple ingredients like spaghetti for a mouthwatering dish.
Ingredients:
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons fish sauce
  • 0.25 teaspoon sesame oil
  • 1 pinch cayenne pepper
  • 4 tablespoons unsalted butter
  • 8 cloves garlic, minced
  • 6 ounces spaghetti
  • 0.25 cup finely grated Parmigiano-Reggiano cheese
  • 1 tablespoon chopped green onion, or to taste
  • 1 pinch red pepper flakes
Instructions:
  • Combine soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper in a small bowl to create the secret sauce.
  • In a skillet over medium heat, melt butter until bubbly. Add minced garlic and sauté for 1 minute until aromatic. Swiftly incorporate the secret sauce and remove from heat.
  • 1. Boil a large pot of lightly salted water. Add spaghetti, stirring occasionally, until al dente, about 12 minutes.
  • Gently fold spaghetti into the sauce using tongs, allowing some cooking water to come along. Mix until fully coated, then fold in Parmesan cheese. Add more pasta water if needed for the perfect consistency.
  • Arrange the noodles on a plate and sprinkle with fresh green onions and a sprinkle of red pepper flakes for a flavorful finish.
