Slow-Cooker Chinese Pork with Garlic Noodles

Succulent slow-cooked pork tossed with flavorful garlic noodles for a satisfying Chinese feast.
Ingredients:
  • 2 pork tenderloins (1 lb each), trimmed
  • 1/4 cup reduced-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon grated gingerroot
  • 2 cloves garlic, finely chopped
  • 3 tablespoons seasoned rice vinegar
  • 1 teaspoon dark sesame oil
  • 2 packages (8 oz each) Chinese noodles
  • 1 cup julienne carrots
  • 3/4 cup diagonally sliced green onions
  • 1/4 cup fresh cilantro leaves
  • 1/3 cup chopped unsalted dry-roasted peanuts
  • 1/3 cup chopped fresh cilantro
  • 9 lime wedges
Instructions:
  • 1. Coat a 5-quart slow cooker with cooking spray. Add the pork. In a small bowl, combine 1 tablespoon of soy sauce with hoisin sauce, tomato sauce, sugar, gingerroot, and garlic. Pour the mixture over the pork.
  • Cover the pork and cook on Low heat for 3 hours and 30 minutes. Transfer the cooked pork to a large bowl and allow it to rest for 10 minutes. Strain the cooking liquid into a separate bowl and keep it warm. Use 2 forks to shred the pork and cover to maintain its warmth.
  • Pour the cooking liquid back into the slow cooker and mix in the 3 tablespoons of soy sauce, vinegar, and sesame oil. Turn the heat setting to High, cover, and cook for 10 minutes.
  • While the noodles are cooking according to package instructions, switch off the slow cooker. Toss in carrots, onions, cilantro leaves, shredded pork, and cooked noodles, ensuring everything is well coated. Finally, sprinkle with peanuts and chopped cilantro before serving with lime wedges.
