Slow-Cooked Red Braised Pork Belly

Slow-cooked pork belly braised in soy sauce, rice wine, and caramelized for a melt-in-your-mouth Chinese delicacy.
Ingredients:
  • 1.5 pounds pork belly, cut into bite-size pieces
  • 0.25 cup vegetable oil
  • 3 tablespoons brown sugar
  • 0.25 cup dark soy sauce
  • 0.25 cup Shaoxing rice wine
  • 0.25 cup light soy sauce
  • 4 scallions, halved
  • 4 slices fresh ginger
  • 4 star anise pods
  • water to cover
  • 0.5 (8 ounce) package vegetarian chicken substitute, diced
  • 6 hard-boiled eggs, peeled
Instructions:
  • 1. Bring a large pot of water to a boil and gently drop in the pork belly. Simmer for about 5 minutes until it starts to soften, then carefully drain.
  • In a wok or large skillet over medium heat, melt brown sugar in vegetable oil until caramelized. Add pork and brown on all sides for about 2 minutes. Stir in dark soy sauce and cook for an additional 5 minutes until flavors meld together perfectly.
  • Place the pork mixture into a slow cooker and combine with rice wine, light soy sauce, scallions, ginger, and star anise. Add water until the pork is just covered.
  • Cook on Low for 6 hours until the pork is tender. Then, add diced chicken substitute, hard-boiled eggs, and enough water to cover the ingredients.
  • Cook on Low for an additional hour, rotating halfway through, until the eggs have absorbed the cooking liquid.
