Ingredients:
  • 250.00 ml Chinese rice wine
  • 202.50 gm hoisin sauce
  • 125.00 ml Chicken Liquid Stock
  • 2 tsp sesame oil
  • 3 star anise
  • 3cm piece fresh ginger, peeled, finely grated
  • 1kg piece pork neck
  • 250g apricots, quartered, stones removed
  • Steamed rice, to serve
  • Asian greens, to serve
Instructions:
  • Mix rice wine, hoisin sauce, chicken stock, sesame oil, garlic, star anise, ginger, cinnamon sticks, and brown sugar in a ceramic dish. Add pork to the marinade, cover, and refrigerate overnight for optimal flavor infusion.
  • Preheat oven to 160°C. Set up a roasting pan with a wire rack. Take pork out of marinade, saving the marinade. Put the pork on the rack and add half a cup of water to the pan.
  • After cooking for 1 hour, baste the pork with reserved marinade every 30 minutes. Turn the pork over, then cook for another 60-90 minutes, basting with pan drippings every 30 minutes until very tender. Transfer the meat to a chopping board and let it sit for 10 minutes before slicing thinly.
  • As the chicken marinates, transfer the leftover marinade to a saucepan. Add apricots and heat over medium heat until boiling. Reduce heat and simmer for 20-25 minutes until the fruit is tender and starting to soften.
  • Drizzle the luscious fruit sauce over tender pork slices and plate with fragrant steamed rice and crisp Asian greens.
