Slow-cooked pork with sauerkraut and caraway seeds, a comforting New Year's Day feast.
Ingredients:
  • 1 (4 pound) pork loin roast
  • 1 teaspoon caraway seeds
  • salt and pepper to taste
  • 2 cups sauerkraut with liquid
Instructions:
  • Trim pork loin to fit into the slow cooker, if needed. Season with caraway seeds, salt, and pepper. Top with sauerkraut.
  • Slow cook on High for 1 hour, then switch to Low and simmer for 5 to 6 hours until the roast reaches an internal temperature of at least 145°F (63°C).
