Slow-cooked pork with rosemary, mushrooms, onions, and sherry, served with potatoes. Easily customizable and perfect for a busy day. Optional: serve with mashed or boiled potatoes on the side.
Ingredients:
  • 1 (3 pound) pork shoulder roast
  • 1 quart vegetable broth
  • 1 cup sherry
  • 3 cups peeled, chopped potatoes
  • 2 cups pearl onions
  • 2 cups sliced fresh mushrooms
  • 1 tablespoon dried rosemary
  • 1 teaspoon ground black pepper
  • salt to taste
Instructions:
  • Add the pork roast to a slow cooker, then pour in the vegetable broth and sherry. Combine with potatoes, onions, mushrooms, rosemary, and pepper.
  • Cook covered on Low for a minimum of 8 hours until reaching an internal temperature of 145°F (63°C). Season to taste with salt.
