Indulge in dairy-free 'nice cream' for a guilt-free vegan treat with minimal ingredients.
Ingredients:
  • 0.25 cup raw cashews
  • 1 ripe banana
  • 1 cup ice cubes
  • 3 ounces extra-firm tofu
  • 2 Medjool dates, pitted
  • 2 teaspoons vanilla extract
  • 1 teaspoon soy milk, or more as needed
Instructions:
  • In a bowl, submerge cashews in water and let soak for 1 to 3 hours. Then, drain.
  • In a blender, blend soaked cashews, banana, ice cubes, tofu, dates, vanilla extract, and 1 teaspoon soy milk until smooth. Add more soy milk only if necessary to maintain a thick consistency.
  • Transfer the mixture to a serving bowl.
