Try these delightful vegan vanilla poached pears!
Ingredients:
  • 4 pears, peeled
  • 54.00 gm pure maple syrup, plus 80ml (1/3 cup), extra
  • 1 vanilla bean, split
  • 6 filo pastry sheets
  • Extra virgin olive oil, to brush
  • 35g (1/3 cup) cacao powder
  • Coconut cream or vegan yoghurt, to serve
Instructions:
  • Scoop out the seeds from the base of the pears using a melon baller or a teaspoon. Put the pears in a saucepan and cover them with water. Add the maple syrup, vanilla seeds, and bean. Simmer for 20 minutes or until the pears are tender. Save the poaching liquid for later use.
  • While waiting, preheat the oven to 200C/180 fan forced. Fold the filo sheets in half, then brush with oil and stack them. Cut the stack into 4 squares. Arrange each stack in a mini cast-iron pan or pie tin, placing a pear on top. Bake for 20-25 minutes until the filo is crisp and golden.
  • In a jug, mix the cacao, additional maple syrup, and 2 tablespoons of the reserved poaching liquid. Stir well. Pour the mixture over the pears and garnish with coconut cream or yogurt.
