Ingredients:
  • 4 buerre bosc pears
  • 1000.00 gm (1 litre) water
  • 1 vanilla bean, split
  • Finely grated zest of 1 orange
  • 5 sheets filo pastry
  • 50g unsalted butter, melted
  • 55g almond meal
  • 120g dark chocolate, grated
  • Icing sugar for dusting
Instructions:
  • Preheat the oven to 195°C. Peel and halve the pears, then remove the core and stems before slicing them lengthways.
  • In a medium saucepan, combine water, sugar, and vanilla bean. Stir over gentle heat until sugar fully dissolves. Bring to a boil, then gently add pear slices, ensuring they are submerged in the liquid. Lower the heat, simmer for 10 minutes. Allow pears to cool in the sweet syrup.
  • Mix the fragrant orange zest with 2-3 tablespoons of enticing vanilla syrup. Place one sheet of pastry horizontally, generously brush with butter, and sprinkle with almond meal and grated chocolate. Add another sheet of pastry on top. Repeat the layers, brushing each one with butter, and sprinkling with almond meal and chocolate for a luscious treat.
  • Take the pears out of the syrup, let them drain, and lay them along one edge of the pastry, leaving a 4cm border. Pour the orange zest mixture over the pears. Fold the sides in and roll up to create a log. Place the log on a baking tray lined with parchment paper. Brush with the remaining butter. Bake for 15 minutes or until golden brown. Sprinkle with icing sugar. Slice with a serrated knife and serve with creme fraiche or ice cream.
