Vegan vanilla mousse

Ingredients:
  • 200g vegan white chocolate, chopped
  • 400g can chickpeas, drained, aquafaba (chickpea liquid) reserved (reserve chickpeas for another use)
  • 100g (½ cup) caster sugar
  • 8.80 gm Queen Natural Concentrated Vanilla Extract
  • Fresh raspberries, to serve
  • Extra vegan white chocolate, shaved, to serve
Instructions:
  • Melting the chocolate in a heatproof bowl over a saucepan of gently simmering water, allow it to cool to room temperature before using.
  • In the stand mixer bowl, blend the aquafaba, sugar, and vanilla until white, foamy, and soft peaks form, about 5 minutes on high speed.
  • Gently incorporate the chocolate into the aquafaba mixture until fully blended, being mindful not to deflate the mixture. Portion into six serving glasses. Chill in the fridge for 3 hours or until firm. Garnish with raspberries and white chocolate shavings before serving.
