Whip up a refreshing vegan strawberry sorbet with just a few ingredients - a cool dairy-free delight for warm weather.
Ingredients:
  • 0.25 cup raw cashews
  • 1 ripe banana
  • 1 cup frozen strawberries
  • 1 cup ice cubes
  • 3 ounces extra-firm tofu, pressed to remove water
  • 2 Medjool dates, pitted
  • 1 teaspoon mint extract
  • 1 teaspoon soy milk, or more as needed
Instructions:
  • In a bowl, submerge cashews in water and let them soak for 1 to 3 hours. Drain before using.
  • In a blender, blend soaked cashews, banana, strawberries, ice cubes, tofu, dates, mint extract, and 1 teaspoon of soy milk until smooth. Add more soy milk if needed to maintain a thick consistency.
  • Transfer to a serving bowl.
