Vegan whole wheat muffins with soy milk, oatmeal, applesauce, and strawberries - a kid-friendly delight!
Ingredients:
  • 2 cups soy milk
  • 0.75 cup unsweetened applesauce
  • 2 tablespoons white vinegar
  • 4 teaspoons vanilla extract
  • 2.5 cups white whole wheat flour
  • 2 cups turbinado sugar
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup diced strawberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease 2 muffin tins with cooking spray.
  • Combine soy milk, applesauce, vinegar, and vanilla extract in a bowl and mix well.
  • Combine white whole wheat flour and whole wheat flour in a bowl. In another bowl, mix oats, baking soda, and salt. Stir in the soy milk mixture until smooth. Allow the batter to rest for 5 minutes.
  • Gently mix strawberries into the batter, then fill muffin tins 2/3 full.
  • Bake in the preheated oven for 30 to 40 minutes until the muffin tops are golden brown and pull away from the tin.
