Vegan strawberry jam Pop-Tarts: a perfect sweet treat for breakfast or dessert on the run!
Ingredients:
  • 1 cup vegetable shortening
  • 3 cups all-purpose flour
  • 2 teaspoons white sugar
  • 0.5 teaspoon salt
  • 0.5 cup ice water
  • 0.75 cup strawberry jam
  • 1 cup powdered sugar
  • 2 tablespoons almond milk
  • 1 drop red food coloring, or as needed
Instructions:
  • Place dollops of shortening on a plate and allow to chill in the freezer for 10 minutes.
  • Combine flour, sugar, and salt in a bowl, then chill for 5 to 10 minutes.
  • Blend the shortening into the flour until no large clumps remain using your fingers. Slowly add 1/2 cup of ice water to achieve a shaggy consistency, kneading briefly on the countertop. The dough should look slightly dry.
  • Place the dough back in the bowl or a large container, cover with a lid, and chill in the refrigerator for 30 minutes.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Roll out the dough into a generous rectangle that is about 1/8-inch thick. Cut it into twelve 4x6-inch rectangles.
  • Spread a generous amount of strawberry jam onto the center of 6 dough rectangles. Moisten the edges with water and cover with the remaining dough halves. Seal each tart with a fork and trim the edges for a cleaner look, if preferred.
  • Bake in the preheated oven until the edges are golden brown, for about 15 to 25 minutes. Allow the dish to cool for approximately 20 to 30 minutes before serving.
  • In a bowl, mix powdered sugar, almond milk, and food coloring to make the icing. Pour the icing over the cooled tarts.
