Creamy vegan coconut yogurt made with agar-agar and probiotic powder, easily adaptable to your preferences.
Ingredients:
  • 2 (14 ounce) cans coconut milk
  • 2 teaspoons agar-agar flakes
  • 4 probiotic capsules
  • 3 teaspoons white sugar
Instructions:
  • In a large, heavy saucepan, gently blend coconut milk until velvety. Sprinkle agar-agar flakes over the surface. Allow the mixture to rest untouched until the flakes plump up, approximately 5 minutes.
  • Warm the milk over medium-low heat while stirring consistently until a thermometer placed in the center shows 180 degrees F (82 degrees C). Lower the heat to low and cook intermittently stirring until the agar-agar is completely dissolved, approximately 5 minutes.
  • Take the saucepan off the heat and cool the milk to 115 degrees F (46 degrees C, stirring occasionally. Use an ice water bath to expedite the process, stirring constantly until desired temperature is reached.
  • Sprinkle the probiotic powder over the milk and discard the capsules. Stir in sugar until dissolved.
  • Place the yogurt mixture in sterilized glass jars with lids, or keep in the saucepan and cover. Allow it to rest in a cozy spot at around 110 degrees F (43 degrees C) until it thickens to your liking, for 12 to 24 hours.
  • Refrigerate yogurt until firm, for 4 to 6 hours.
