"Indulge in a refreshing strawberry gelato with a vegan twist."
Ingredients:
  • 0.25 cup lemon juice
  • 1 teaspoon cornstarch
  • 1 (16 ounce) package frozen strawberries
  • 2 cups soy milk
  • 0.66666668653488 cup white sugar
  • 1 (1 gram) packet granular sucrolose sweetener (such as Splenda®), or to taste
  • 0.125 teaspoon citric acid powder (sour salt), or to taste
Instructions:
  • Combine the lemon juice and cornstarch in a small bowl, then pour into a blender along with the strawberries, soy milk, sugar, sweetener, and salt. Blend until creamy.
  • Transfer the mixture to a pot and cook it over medium heat, stirring regularly until it boils and thickens, approximately 10 to 15 minutes. Then, cover the pot and refrigerate the mixture for at least 8 hours, ideally overnight.
  • Transfer the mixture into an ice cream maker and freeze according to the manufacturer's instructions, working in 2 batches if needed, for approximately 20 minutes. Once done, place the ice cream in an airtight container and freeze until firm, typically around 4 hours.
