Ingredients:
  • 1kg peach
  • 40.00 ml finely chopped fresh mint leaves
  • 160ml brandy (optional)
  • 220g caster sugar
  • 250ml water
  • 125ml liquid glucose
Instructions:
  • To make the sugar syrup, combine sugar, water, and liquid glucose in a small saucepan. Cook over high heat while stirring until sugar dissolves and the mixture boils. Let it boil for 10 more seconds, then take it off the heat and let it cool.
  • Score each peach with a X mark, then quickly blanch them in boiling water for 20-30 seconds. Use a slotted spoon to transfer peaches to ice water to cool. Peel off skins, then marinate in lemon juice until colors release. Squeeze out juices before discarding skins, keeping the flavored juice.
  • Halve the peaches, remove the stones, and blend the peach flesh in a food processor until smooth, about 2 minutes. Add mint, brandy, sugar syrup, and color-infused lemon juice, then blend for 30 seconds until fully combined.
  • Chill the electric mixer's bowl in the fridge or freezer. Take the sorbet out of the freezer and break it into smaller pieces using a wooden spoon. Transfer the sorbet to the chilled mixing bowl and beat with the paddle attachment of the electric mixer until smooth. Level the surface, freeze for at least 2 hours until firm, then serve in bowls.
