Delicious pork and chorizo dish made effortlessly in slow cooker or oven.
Ingredients:
  • 1.5kg-piece boneless pork leg, trussed
  • olive oil
  • 2 sprigs rosemary
  • 2 chorizo sausages, sliced
  • 60ml chicken stock
  • 400g can cannellini beans, rinsed and drained
  • 1 apple, cut into wedges
  • Steamed vegetables, to serve
  • Crusty bread, to serve
Instructions:
  • Preheat a large non-stick pan over medium-high heat and spray with oil. Coat the pork with olive oil, salt, and cracked black pepper. Sear the pork until all sides are golden brown. Plate and set aside.
  • Add the pork, rosemary, chorizo, and stock to the slow cooker. Cook as per the manufacturer's instructions.
  • - 20 minutes before serving, gently mix in the white beans and apple. Cover and allow the flavors to meld. - Transfer the pork to a plate, cover, and let it rest for 10 minutes. Slice the pork and distribute it among the serving plates along with the chorizo and white bean mixture. - Drizzle with the cooking juices and serve alongside steamed vegetables and crusty bread.
